A novel protein ingredient may look promising on paper—but protein content alone does not tell us where it will work, how it will behave, or why a buyer should choose it.

Functional testing changes that.

It reveals how an ingredient performs across real product conditions: how easily it disperses, how well it dissolves, whether it foams or emulsifies, how it affects texture, and where colour or flavour may become an advantage—or a limitation.

These insights can completely reshape the commercial direction of an ingredient.

Why it matters

A protein initially positioned for neutral beverages may prove far better suited to cocoa-based drinks, bakery, nutrition bars, savoury applications, or blended formulations. An ingredient with strong foaming may open opportunities in egg replacement. One with good water-holding or emulsification may be more valuable in structured foods than in a simple powder mix.
